Guest guest Posted October 29, 2001 Report Share Posted October 29, 2001 Cucumber Salad Source: Bonni at SDA-Vegan-Cooking 2 large cucumbers, peeled 1 teaspoon salt 1 small chile pepper, seeded, minced 2 teaspoons lime juice 1 garlic clove, minced Slice the cucumbers lengthwise and remove seeds with a melon baller or spoon. Slice each half into 1/2 inch pieces. Place them in a bowl and sprinkle on the salt. Toss gently and let sit for 30 minutes. Drain well. Place the cucumbers in a serving bowl and add the chilies, lime juice, and garlic. Toss well.
