Millet Entree

Source: Strict Vegetarian Cookbook

 

1 cup uncooked millet

5 cups tomato juice

1 medium onion, chopped

1/2 tsp. salt

1/2 cup sliced ripe olives

1/2 cup cashew pieces

1/2 tsp. sage

1/2 Tbsp. garlic powder or savory

 

Mix in the same entree dish used for baking. Cover well with foil or well

fitting lid so the moisture from the entree won't escape.

 

Bake at 325° for 2 hours, then bake at 250° for 1 more hour.

 

Note: This entree is delicious without gravy.
