Guest guest Posted October 24, 2001 Report Share Posted October 24, 2001 Walnut-Rice Stuffing Source: Strict Vegetarian Cookbook Cook: 1 large chopped onion 1 cup brown rice 1/4 cup minced parsley 1 3/4 cups water 2 Tbsp. lemon juice salt as needed 1 tsp. oregano 1/2 tsp. thyme scooped out portion of tomatoes, zucchini, or eggplant When the rice is done, add: 1 cup chopped walnuts Use to stuff or fill tomatoes, zucchini, eggplant, or green peppers. (About 12 medium tomatoes, 2 large eggplants, 6 medium zucchini, or 8 - 10 medium green peppers).
