Guest guest Posted October 19, 2001 Report Share Posted October 19, 2001 BROCCOLI " CHEESE " SOUP Source: Recipes of Friendship Cookbook 1 1/4 cups cooked potatoes 1 1/2 cups cooked carrots 1 medium onion, steamed 1/2 cup sunflower seeds or cashews 1 tsp. salt 4 cups broccoli [i also add garlic powder, onion powder, and a chicken-style seasoning such as Bill's Best] Steam broccoli until tender while preparing " cheese " sauce. Blend sunflowers or cashews with just enough water to couver. Blend until very smooth. Add potatoes, carrots, onion, salt, [other seasonings], and remaining water. Blend until smooth. This may have to be done in two steps as you may not have enough room in your blender. [Work carefully, as blenders like to burp out hot liquid!]. Pour into a saucepan and add cooked broccoli. Heat over medium heat until thick and hot. Serve hot.
