Guest guest Posted October 18, 2001 Report Share Posted October 18, 2001 Crust-less Pina Colada Pie Source: Benton Sister's Vol. 3 Bottom Layer: 1 Tbsp. cornstarch 2 cups soy or nut milk 1 Tbsp. Emes Kosher gelatin (vegan) 2 Tbsp. liquid sweetener (maple syrup, malt barley syrup, or brown rice syrup) 1 tsp. vanilla 1/2 cup finely shredded coconut Mix first 3 ingredients together in a saucepan. Set aside for 5 minutes to soften. Add liquid sweetener and bring to a boil. Boil for 1 minute. Mix in vanilla and coconut. Pour into a prepared 9 " pie plate. Chill in refrigerator about 2 hours or until set. Top Layer: 2 Tbsp. Emes Kosher gelatin (vegan) 1 - 20 oz. can crushed pineapple 2 Tbsp. liquid sweetener Drain pineapple, collecting juice in a small saucepan. Sprinkle the Emes gelatin over the juice. Let sit for 5 minutes. Heat over medium heat until the boiling point is reached. Remove from heat. Stir in liquid sweetener and pineapple. Cool slightly.
