Crust-less Pina Colada Pie

Source: Benton Sister's Vol. 3

 

Bottom Layer:

 

1 Tbsp. cornstarch

2 cups soy or nut milk

1 Tbsp. Emes Kosher gelatin (vegan)

2 Tbsp. liquid sweetener (maple syrup, malt barley syrup, or brown rice syrup)

1 tsp. vanilla

1/2 cup finely shredded coconut

 

Mix first 3 ingredients together in a saucepan. Set aside for 5 minutes to

soften. Add liquid sweetener and bring to a boil. Boil for 1 minute. Mix in

vanilla and coconut. Pour into a prepared 9 " pie plate. Chill in refrigerator

about 2 hours or until set.

 

Top Layer:

 

2 Tbsp. Emes Kosher gelatin (vegan)

1 - 20 oz. can crushed pineapple

2 Tbsp. liquid sweetener

 

Drain pineapple, collecting juice in a small saucepan. Sprinkle the Emes

gelatin over the juice. Let sit for 5 minutes. Heat over medium heat until the

boiling point is reached. Remove from heat. Stir in liquid sweetener and

pineapple. Cool slightly. Spread over the coconut mixture and chill until set

(1 - 2 hours).
