Guest guest Posted October 12, 2001 Report Share Posted October 12, 2001 Ragout of Vegetables Source: Eat for Strength (Thrash) 2 1/2 cups carrots 2 1/2 cups young turnips or potatoes 6 small onions 1/4 cup water 3 Tbsp. whole grain flour (or 1 1/2 Tbsp. starch) a sprinkle of herbs 2 1/2 cups vegetable broth or water salt to taste Cut carrots in rounds and turnips in wedges. Braise carrots, turnips, and onions in a saucepan with 1/4 cup water. Add the flour and continue cooking a few minutes. Add remaining ingredients. Let boil gently under cover until well done, and the gravy is reduced to a nice consistency. Serve with rice, croutons, or dumplings.
