Buckwheat Pancakes

Source: Vegetarian Cooking for People with Diabetes

 

Mix together in a medium bowl:

 

1 1/2 cups buckwheat flour

1 1/2 tsp. baking powder

 

Beat in:

 

2 1/4 cups low-fat soymilk

1 Tbsp. oil

 

Heat lightly oiled frying pan on medium-high. When pan is hot, drop on by

tablespoons. Flip once when bubbles appear,a nd cook until golden brown on

bottom.

 

Makes: 8 pancakes

 

Calories: 112

Carbs: 19 gm.

Fat: 2 gm.

Protein: 5 gm.
