Guest guest Posted October 8, 2001 Report Share Posted October 8, 2001 Forwarded for Teresa ~ RED LENTIL SOUP ~ here's a recipe we love at our home and is definitely a hit at my vegan restaurant. ~ here's my red lentil soup recipe 5c water 5med size carrots cut in 5 inch pieces 5 celery sticks cut in 5 inch pieces 3 large onions or 4 med chopped 1/2 " pieces boil 15 min blend carrots, celery and just enough water to make blend. using your leftover water put 4 cups of water to boil with 1 1/4c red lentils zest and juice from 5 med lemons 2TB basil 1/2 tb onion pwd 1/2 tb garlic pwd salt to taste (approx 1 tsp to 1-1/2 tsp) when soft--about 20 min, try and get it so it's not watery. add blended veggies and voila --yummy lemony basil soup should almost taste tomatoey ~ Pray for Peace ~ http://www.Christian-Vegan-Cooking Quote Link to comment Share on other sites More sharing options...
