Guest guest Posted October 5, 2001 Report Share Posted October 5, 2001 Curried Corn Salad 1 T safflower oil 1/2 c. red onion, finely diced 1/2 c. red pepper, finely diced 1/2 c. green pepper, finely diced 1/2 t. curry powder 1/2 t. oregano 1/4 t. turmeric 4 c. cooked corn (cut from cob if fresh) 1/2 c. pimento stuffed green olives, sliced 1/2 c. Vegannaise 3/4 t. salt seasoning, or salt free seasoning 2 T. cilantro, fresh (optional) Using oil, saute onion until soft, add peppers to wilt stage. Add spices and mix. Place in large serving bowl and add corn, olives, mayo and seasoning. Mix well. Garnish with cilantro.
