Guest guest Posted September 29, 2001 Report Share Posted September 29, 2001 Apple-Apricot Compote Source: Angie P. - SDA-veg-recipes 3/4 cup dried apricots 1 cup hot apple juice or cider 1 crisp green or red apple, quartered, cored & diced 2 tbsp chopped toasted walnuts 1 tbsp cinnamon sugar (or alternative) 1 cup raspberries or strawberries, optional Soak dried apricots in hot juice overnight. Drain, slice in half and place in a mixing bowl. Add apple and walnuts; toss to blend. Sprinkle with cinnamon sugar; toss to blend. Divide between 2 stemmed glasses. Spoon berries over each serving.
