Beans and Dumplings

Source: Nature's Harvest

 

2 cups cooked beans

1/2 tsp. salt

1 cup water

1 Tbsp. vegan margarine

1/4 tsp. caraway seeds

 

Add water and margarine to beans. Bring to boil. Drop corn meal dumplings on

top. Cook as directed for dumplings. Add caraway seeds.

 

Corn Meal Dumplings

 

1/2 cup corn meal

3/4 cup boiling water (or soy milk)

1 tsp. oil

1/2 tsp. salt

1/4 tsp. mint, sage, or parsley flakes

 

Put corn meal into small bowl. Add water or soy milk, herbs, salt, and oil.

Cook. Drop batter by Tbsp. on top of beans. Cover tightly. LEt boil 3

minutes, then simmer 10 minutes.
