Use this as a meal in itself or a side dish. Ingredients: 4 cups cooked penna pasta 1 tbsps plus 1 tsp. olive oil 1 1/2 cups chopped onion 3 cloves garlic minced 3 cups chopped ripe plum tomatoes 1/2 cup water 1/2 tsp salt 1/2 tsp sugar 2 cups broccoli florets 2 cups chopped zucchini 1 cups snow peas 1/2 cup carrots julienned 2 tbsps chopped parsley Directions: 1 Heat the oil in a 3 qt. saucepan. 2 Add the onion and garlic, and cook, stirring until softened. 3 Add the tomato, water, salt and sugar. 4 Cook for 10 minutes, stirring often. 5 Add the broccoli, zucchini, snow peas, carrots and parsley. 6 Cook until vegetables are tender-crisp. 7 Serve over the pasta.
