I have made several recipes that I found there that I'll share with all of you. :-) This is a really basic hummus recipe as well if you don't add the black olives. Cucumber Log Filled With Black And Gold Hummus This is a refreshing, creative appetizer that always wins them over. Serve at parties or treat yourself! Makes 12 Servings Preparation Time: 30 min. Ingredients: 2 cucumbers 1 15 oz can chickpeas rinsed 1 tbsp water 1/3 cup lemon juice 1/4 cup black olives diced 1 tsp salt 1 tbsp olive oil Directions: 1 Cut off the ends of the cucumbers. Cut each cucumber into 6 rounds and arrange the pieces so they are flat. Using a melon baller or grapefruit spoon, gently scoop out some of the cucumber flesh from each round. 2 In a blender, make the hummus by combining the chickpeas, oil, water, lemon juice and salt. 3 Puree, and add water for more creaminess. 4 Stir in the black olives. 5 Spoon the mixture into the hollowed out part of each cucumber round. 6 Arrange on a serving tray - beautiful over lettuce leaves.
