Recipe: Chocolate Applesauce Cake

Before anyone sends me an email saying this isn't vegan.. let me explain why I'm

sharing this :-) What I loved about finding this one is how this is really

already a gluten-free recipe, no real modifying is necessary other than for the

eggs. I figure for those of you who've mastered substituting other products for

eggs, you might appreciate seeing this recipe. Enjoy. :-)

 

Chocolate Applesauce Cake

This odd-sounding, confounding, but absolutely astounding dessert was concocted

by one of our long-time members on maintenance. She sure knows how to cook,

because this recipe takes the cake.

 

Makes 8 Servings

Preparation Time: 1 hour

 

Ingredients:

1 whole egg plus 2 egg whites

1/2 cup sugar

4 tsps oil

1/4 cup cocoa

1/2 cup potato starch

1 tsps baking powder

1 tsps vanilla sugar (I'd just use 1 tsp of vanilla and 1 tsp sugar since I

haven't seen gf vanilla sugar)

1/2 cup applesauce

 

Directions:

1 Beat egg whites until stiff.

2 Add sugar slowly, while beating.

3 Add egg yolks one at a time while beating.

4 Add oil, beat.

5 Add cocoa, beat.

6 Add starch and baking powder and beat.

7 Add applesauce while mixing slowly.

8 Preheat oven to 375 degrees.

9 Bake 35-45 minutes until you can remove an inserted toothpick and it's clear.

10 After removing cake from oven, in order to prevent cake from falling, lean

it against something sturdy on its side.
