Guest guest Posted September 24, 2001 Report Share Posted September 24, 2001 Quinoa/Potato petite Croquettes source: booklet 2 cups potatos mashed with skins on 2 cups quinoa grain cooked(1 cup grain to 2 cups water) binder equivilent to 2 beaten eggs 1/2 cup onion, chopped 1/4 cup parsley, chopped 1/2 tsp. salt 1/2 tsp. cumin 1/2 tsp oregano Combine all ingredients. Mix well and form into 1 " balls. deep fry until golden brown. I would think that these would be good flatten and fryed in a little oil like patties.
