Guest guest Posted September 7, 2001 Report Share Posted September 7, 2001 Cream of Fresh Vegetable Soup source: friend, Julie 1 1/2 c chopped, fresh vegetable (eg peas, broccoli, asparagus) 1 T olive oil 1/2 C diced onion 1/4 C diced celery 1/8 C shredded carrot 2/3 C diced fresh vegetables (same as selected above) 4 C water 2/3 C raw cashews 2 T chicken style seasoning 1 t salt 1/2 t onion powder 1/4 t celery salt Steam 1 1/2 C vegetables in a small amount of water until cooked. Place in blender and blend until smooth. Place in a small bowl. Pour olive oil in the bottome of a 2 quart pan and saute onion, celery and carrot. Add 3 C water to saucepan and bring to a slow boil. Add blended vegetables and 2/3 C chopped fresh egetables. Simmer for 5 minutes. Place cashews, 1 C water and seasonings in blender and blend until smooth and creamy. Slowly add to soup and bring to a boil. Serve Serves 6 I have only made this with broccoli, but it has quickly become a favorite.
