Guest guest Posted August 30, 2001 Report Share Posted August 30, 2001 Pina Colada Source: Cooking Class 1 cup frozen pineapple juice concentrate 1/2 tsp. coconut extract unrefined sweetener to taste (Sucanat, honey, maple syrup,stevia) 2 cups lowfat soy milk (or alternative) 1 tsp. pure vanilla extract Blenderize the above and pour into ice-cube trays. Freeze until firm. Place in electric blender or food processor and blend until slushy. Serve in sherbet glass as it is garnished with red grapes or a strawberry or an orange slice for color. May add 1/2 can of ginger-ale or cream soda to serve as a slushy drink in a pretty glass. *There are some nice flavored seltzer waters or fruit sweetened soda's available at the health food store that would be healthier than the traditional version.
