Guest guest Posted August 30, 2001 Report Share Posted August 30, 2001 Waldorf Salad Source: Cooking Class A light and satisfying quick dessert 4 - 6 cups diced golden delicious or Fuji apples 2 cups halved and seeded red grapes 1 cup diced celery 1/2 cup chopped walnuts or pecans 1/2 cup chopped dates Mix all above ingredients together and add the following sweet salad dressing: 1 carton plain soy yogurt flavored with 1 tsp. vanilla and sweetened with stevia powder (to taste). OR, 1 carton of lowfat, soy Pina-Colada flavored yogurt. For a different twist on a dessert. Put the waldorf salad in sherbet/champagne glasses and top with 3 mini scoops of mango sorbet using a melon baller instead of an ice-cream scoop.
