From EAT FOR STRENGTH -- A Vegetarian Cookbook by Agatha Thrash, M.D.

 

COCONUT BUTTER

 

2/3 cup hot water

1 cooked carrot

2/3 c. coconut oil

2 tbsp. soy milk powder

1 tbsp. lecithin

1/2 c. liquid oil

 

Whirl together in blender. Pour into mould. Refrigerate.

 

I substitute rice milk for the water and soy milk powder. I use olive oil

for

the liquid oil.
