Recipe: Millet Patties

I have been wanting to cook some millet. In fact, I was going to do it today

but can't find out how long to cook it. One book says 30 minutes another says

2-3 hours. How long do you cook it for and how much water do you use?

From Country Kitchen Collection - Adapted

 

MILLET PATTIES

 

a.. 1 1/2 cup cooked millet

b.. 1 c. mashed potatoes

c.. 1/2 c. cooked quinoa or brown rice (original calls for oats)

d.. 1/2 c. ground nuts

e.. 1 c. onion, chopped

f.. 1/2 c. water

g.. 1 tsp. salt

h.. 2 T. chicken style seasoning

i.. 3-4 T. nutritional yeast

Shape into patties. Brown on both sides in a non-stick skillet. Place in

baking dish. Pour gravy or tomato sauce over and bake or serve plain with buns.

 

I varied my recipe, by substituting 1/2 the nuts with left-over sunflower seed

sour cream (gave the patties a bit of a lovely tang). 1/2 tsp. more chicken

style seasoning was added. I didn't brown them in a non-stick skillet...I just

baked them in little rounds, using a jelly canning jar ring to form the shape.

I baked the patties in the oven on a non-stick cookie sheet for 30 minutes on

the first side, then turned and baked 20 more minutes. I also added about 2

tablespoons of dried vegetable medley. Vegetable Medley is anything in your

garden that you want to dry, then grind up to a powder and store in a handy jar.

I mixed all sorts of stuff last summer: squash, carrots, spinach, astragulus,

onion, chives, lettuce, carrot tops, radish tops, parsley, anything you like.

Adds extra nutrition and flavour to your dishes.

 

We really liked the patties done this way....You can serve them with a sliced

tomato, large salad, rice, etc.

 

Just telling you what we did. I haven't tried just following the recipe exactly

as it is described in the Cookbook.
