Guest guest Posted July 14, 2001 Report Share Posted July 14, 2001 Buckwheat Pancakes/Waffles Source: ME with help from Wheat-free cooking Makes 10 pancakes or 3 waffles 1 cup buckwheat flour 1 cup rice flour 2 cups soy milk or water 1 tsp. baking soda 2 tsp. baking powder 1 tbs. oil 1 tbs. brown sugar 1 tbs. apple pie spice (opt) Mix all ingredients thoroughly. cook in dry non-stick skillet. When making Waffles, cook on the kind that gives you four squares. Then break apart the squares and freeze. When you want them, pop them into the toaster. Great Instant breakfast.
