BUT my husband has Crohns disease and my son has Sensory Integration Disorder and its exacerbated by food sensitivities and a GF diet seems to help a great deal. I'm finding, when we have time we do fine with staying GF, its when we're too busy to cook or my son is clamouring for snacks that we have trouble. Thats when my " here have a salad, have an apple, how about a bowl of rice? " are met with protest. I was wondering if anyone has tried Once a Month Cooking that's vegan and GF? I noticed the vegan corn dog recipe and I think my son would LOVE having those in the freezer to pull out and heat up when he needs a snack....and...his friends would be happy if I didn't offer lentil soup when they're hungry too! My dh could use some quick freezer dishes to take to work and I'd love a few I could pull out on karate nights etc. Everything I see at OAMC sites seems totally packed with dairy and meat. Guest guest Posted July 12, 2001 Report Share Posted July 12, 2001 Hello-- I would love to do once a month cooking. I have never tried this with a GF diet. we have been GF for 4 years. Look through the archives. There a lot of recipes there. There is one for Mac-n- cheese, that is totally dairy free. My kids go nuts for it. You could probably store it in small containers and freeze it for individual meals or snacks. Heats up well in the microwave too. The interesting thing with Crohns is that it is in the same family as CD so GF and meat and dairy free help a lot with it. Also water water water makes a huge difference in the way people feel. I do cook OAWC (once a week, LOL!!) for my son who has multiple food allergies, and I've experimented with a few from here -- they haven't been eaten yet from their frozen state as I'm storing up for winter right now (he's also allergic to corn, and most of the fruits and veggies we get in the northeast during the winter have been artificially ripened with corn -- even in the health food stores -- virtually every banana in the US all year long is, as well).
