Corn Bread Source: Wheat-free cooking by Phyllis Potts 1 cup yellow corn meal 1 cup rice flour 1/4 cup granulated sugar 1 tsp. salt 2 tsp. xanthan gum 2 tbs.baking powder 1/3 cup oil 1 egg replacer 2 cups milk or water Preheat oven to 350 Butter generously 8-inch square pan Combine dry ingredients in large bowl. Combine liquid ingredients in another bowl. Stir liquid ingredients into the dry ingredients until just blended pour into buttered pan Bake at 350 for 40 min. or until done.
