Guest guest Posted June 20, 2001 Report Share Posted June 20, 2001 Corn Chowder Source: The Best of Silver Hills 6 cups water 1/2 cup diced onion 1` Tbsp. olive oil 1/2 cup chicken-style seasoning (Bill's Best or McKays) 1 tsp. salt 1 Tbsp. diced parsley (fresh or dried) 1/2 tsp. onion powder 1/2 tsp. celery salt dash cayenne (optional) 1 1/2 cups diced potatoes 1/3 cup grated carrots 1/3 cup diced celery 1 1/2 cups corn (fresh, frozen, or canned) 1 cup raw cashews 1 cup water Saute onion in olive oil in bottom of a large saucepan until clear. Add water and bring to a boil. Add seasoning and vegetables except corn. Simmer until soft. Add corn (if using fresh corn add a bit earlier). Blend cashews in 1 cup of water until creamy and smooth. Slowly add to soup and bring to a slow boil. Serve immediately.
