Guest guest Posted June 22, 2001 Report Share Posted June 22, 2001 Fresh Cherry Cobbler Source: Betty Crocker Made gluten free by ME 1 1/4 cups sugar 3 TBS cornstarch 4 cups cherrys (tart is best) 1/4 tsp, almond extract (we used vanilla) 1/4 tsp. cinnamon 3 TBS shorting 1 cup white rice flour 1TBS. xanthan gum 1 TBS. sugar 1 1/2 tsp. baking powder 1/2 tsp. salt 1/2 cup soy milk heat oven to 400F. Mix the first 5 ingred. in a sauce pan over med. heat. cook, stirring constantly, until mixture thickens and boils. Boil and stir 1 min. Pour into ungreased casserole dish; keep cherry mixture hot in oven. Cut shorting into the next 5 ingred.(NOT MILK) until mixture resembles fine crumbs. Stir in milk. Drop by 6 spoonfuls onto hot cherry mixture. Bake until topping is golden brown, about 25-30 min. serve warm. This was wonderful we had it today.
