1 package frozen raspberries, thawed

1 tsp. arrow or cornstarch

1/8 tsp. almond flavoring

3 cups cantaloupe balls or chunks

1 Tbsp. slivered almonds

 

The night before, stir cornstarch into berries and cook to thicken

slightly. Stir in flavoring. Cover and refrigerate. Prepare melon

balls if you have time, otherwise cut into chunks. Put in serving

bowls, cover and refrigerate. When ready to serve, spoon raspberries

over melon and top with almonds.

 

***I would prepare the raspberries a bit differently. Strain the

juice from the berries. Set berries aside and add the cornstarch to

the berry juice. Cook to thicken. Cool and then stir the berries

into the thickened berry juice. I think it is too easy to overcook

the berries with the instructions given in the recipe.
