Guest guest Posted June 12, 2001 Report Share Posted June 12, 2001 Kohlrabi Salad with Soy Bean Sprouts 3 tablespoons sesame seeds 4 small kohlrabis 2 red apples 2 tablespoons lemon juice fresh soy bean sprouts as desired 3 tablespoons apple vinegar (or lemon juice) 1 tablespoon maple syrup 1 teaspoon salt 2 tablespoons walnut oil Fry sesame seeds in a dry pan at medium heat until golden. Peel kohlrabis and cut them pencil-thin. Wash and chop the kohlrabi greens. Wash and cut up apples and sprinkle with lemon juice. Blanch soy bean sprouts in boiling water for three minutes. Mix with apple, kohlrabi and kohlrabi greens. Mix vinegar with syrup, salt and oil. Dress salad and sprinkle with sesame seeds.
