Guest guest Posted June 12, 2001 Report Share Posted June 12, 2001 MEXICAN CASSEROLE Source: a mom on the AHE homeschool list 1 small bag fritos (about 10 oz) 1 small-medium onion - chopped 1 can of refried beans (about 27 oz size) 1 can Ro-tel (this is a brand name which comes in at least 3 flavors. I used the Mexican flavor) 1 can of corn (or about a cup of frozen corn) 1 can diced tomatoes - about 14 oz (I used the Safeway brand Mexican flavored tomatoes) 1 small can of tomato sauce garlic powder, onion powder, cumin and salt to taste* *If you use the Mexican flavor Ro-tel and the Mexican flavor diced tomatoes, you probably will not want to add the extra spices. Taste to see. Mix all ingredients except the fritos. Put fritos in 9x13 pan. The original recipe said to bring the ingredients to a boil, simmer 5 - 10 minutes, pour over chips and bake at 350 degrees for about 30-40 minutes or until the edges are brown.
