Yield: 1 quart

 

1 cup water

2 cups cashews

1/2 cup yeast flakes

2 tsp. onion powder

3 Tbsp. finely grated carrot

1/2 tsp. garlic powder

1 1/2 cups boiling water

1/3 cup plus 1 rounded Tbsp. Emes unflavored gelatin (vegan)

1/2 cup lemon juice

1 or 1 1/2 tsp. salt

 

Soak gelatin and 1 cup water in blender. Pour boiling water over

soaked gelatin and cool briefly, then blend to dissolve. Add cashews

and blend until creamy. Add remaining ingredients and blend again

until creamy. Pour into a quart mold. Cover and refrigerate 6 - 8

hours until firm. Slice and use as sandwich filling or on crackers.

 

*For ease in grating: freeze first and grate while frozen.

 

Variation: Substitute 1 pimento for grated carrot for a darker color.

 

Serving Suggestions:

 

a) Potato-au-gratin --- use baked or boiled potatoes; open potato

and spread sliced cheese on top. Broil for 2 minutes or toast in

toaster oven or in microwave 2 minutes at medium. Cheese will melt.

 

b) Melt on steamed cauliflower or broccoli.
