Slice and use as sandwich filling or on crackers. *For ease in grating: freeze first and grate while frozen. Variation: Substitute 1 pimento for grated carrot for a darker color. Serving Suggestions: a) Potato-au-gratin --- use baked or boiled potatoes; open potato and spread sliced cheese on top. Broil for 2 minutes or toast in toaster oven or in microwave 2 minutes at medium. Cheese will melt. b) Melt on steamed cauliflower or broccoli.
