3/4 cup amaranth or rinsed quinoa

1/4 lb. tofu

2 Tbsp. sweetener

1/3 cup sunflower seeds

1/2 cup coconut

1/2 tsp. salt

3 cups water

 

Blend all ingredients in blender to make a pourable batter. Pour out

on 2 well-oiled cookie sheets. Bake at 300 degrees for 15 minutes.

Take out of oven and score into squares. Turn oven to 200 degrees,

continue baking until crisp, about 1 hour.
