Dry ingredients:

 

1 cup millet flour

1/2 cup unsweetened coconut

1/2 tsp. ground anise

2 tsp. ground coriander

1/2 tsp. salt

 

Wet ingredients:

 

2 Tbsp. sweetener

1 cup water

1 cup tofu

1 cooked sweet potato

1 Tbsp. oil (optional)

 

Mix dry ingredients. Blend smooth remaining ingredients. Mix all

ingredients. Spread on oiled cookie sheet. Bake at 350 degrees for

45 - 60 minutes. Cut into squares. Serve.

 

*Suggestion: commercial fine millet flour can be purchased in a

natural food store and makes a lighter bread. You can blend a cup of

millet in the blender to make a course flour. Or use a grain mill.
