Guest guest Posted June 5, 2001 Report Share Posted June 5, 2001 One-Dish Meal Layer the following ingredients in a 9x13 baking dish: 1 1/2 c long-grain rice 1 lg. onion, sliced thin 3 lg. carrots, sliced thin 2 lg. potatoes, sliced thin Lightly salt & pepper each layer as you put it in the dish. Pour 4-1/2 c. V-8 juice over all. Bake at 325 for 1 hr. 15 min to 1-1/2 hours. You can also add 1 lb equivalent of hamburger substitute & layer above the rice. Delicious!!!
