Guest guest
This is very interesting. . .a great idea for gluten-free waffles. From Olive on Christian-Vegan-Cooking. For the most part I found out that a waffle can be made with just flour and water(salt if desired). One trick is to know how thick to make the batter. If it is too thin then it runs out. If it is too thick then it becomes 'heavy'. Each flour was also different. Millet and Corn did best when I added boiling water to the flour. That way it didn't separate when poured onto the waffle iron. I usually oil the 'hot' iron which also helps a lot. After experimenting with just flour and water I found that I could also add a nut or seed (for protein). One other tip. Some of the none gluten flours might do better if you let them set for a while before putting on the hot iron. If you can use oats you can soak the oat flakes over night and then spoon them onto the hot iron. We used to use milk instead of water. It was pretty good. Just a few ideas.
