This soup features English cucumbers, which are longer than the

standard American cucumber you are used to seeing in salads. If you

have problems digesting cucumbers, English cucumbers are for you.

 

1 1/2 cups rice milk

1/2 English cucumber

 

Chill the rice milk in the freezer for 15 minutes. Put the cucumber

through a juicer. Combine the cucumber juice and rice milk in a

blender.

 

1 Tbsp. fresh dill weed, or 1 tsp. dry dill weed.

 

Pour into a bowl and top with the dill weed.
