Yield: 4 - 6 servings

 

Preheat the oven to 425° F. Mix the dry ingredients in a bowl.

 

Dry ingredients:

 

1 cup cornmeal

1 cup barley flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon sea salt

 

Liquid ingredients:

 

1 cup non-dairy milk

1 tablespoon vinegar (or lemon juice)

1/4 cup liquid sweetener

3 tablespoons oil or melted non-dairy margarine

egg replacer equivalent to 1 egg (see archives for suggestions)

 

In a separate bowl, combine the non-dairy milk and vinegar, stir

well, then add the rest of the liquid ingredients. Combine the dry

and liquid mixtures, and mix well. Pour into an oiled and floured 9

X 9-inch baking pan, and bake for 20 minutes. Cut into squares and

serve.
