Netzer " custard-like tofu is made form curdled soy milk, and iron-rich liquid extracted from cooked, ground soybeans. The resulting curds are drained and pressed. Its firmness depends on how much whey has been pressed out. Tofu is very perishable and should be refrigerated and stored covered with water, which must be changed daily. In this tasty recipe, the tofu needs to be marinated for at least twenty-four hours.....ideally for two or three days. The spiced lime-jucie marinade creates a sensational infusion for these tofu-tiles. Serve on a bed of greens or cubed in a pita pockets with shreds of lettuce, tomatos, chopped onions, minced cilantro and/or diced cucumbers. " 1 12 ounce block medium-firm tofu, well drained 1 1/2 cups warm water 3 tbs.fresh lime juice 2 tsp. sesame oil 2 lrg.cloves garlic, pressed 6 scallions, white bulb and tender greens, chopped 2 tsp. freshly grated ginger 1tbs. minced fresh mint or 1/2 tsp. dried hot pepper flakes to taste. 1. Cut tofu block in thirds, then into 1/4 inch slabs. Place tofu in a shallow bowl, and set aside. 2. Combine all remaining ingredients in a separate bowl and blend thoroughly. Pour marinade over sliced tofu, cover tightly, and refrigerate for at least 24 hours, turning once or twice. 3. Prepare grill or broiler 4. Grill or broil tofu until grill marks appear of until browned. Turn carefully, brush with any leftover marinade and grill other side until nicely brown.
