Guest guest Posted May 17, 2001 Report Share Posted May 17, 2001 Orange " Chicken " & Tofu " Chicken " I had this one in my files from a website, unfortunately, I didn't have on file which website Orange " Chicken " 1 lb Tofu " Chicken " , cut into 1/2 " slices Flour for dusting Oil 1/3 cup bell pepper strips 1/2 cup chopped sweet onion 1/3 cup orange juice 2 Tbs ketchup 1 tsp prepared mustard 1 tsp garlic powder 2 Tbs soy sauce 2 Tbs corn starch Dash of pepper Dust " chicken " slices with flour. Shake off excess. In a frying pan, fry in a small amount of oil until lightly browned. Set aside. Combine remaining ingredients, and put into pan. Cook over medium heat, stirring constantly, until thickened. Add " chicken " , and cook, stirring, until heated through. Serve over rice or noodles. ---- Tofu " Chicken " (Basic) 1 lb firm waterpacked Tofu -- drained, frozen, thawed, and gently pressed 1 quart water 2 Tbs vegetarian 'chicken' bouillon powder 1/2 tsp sugar or equivalent 1/4 tsp celery seed 1/4 tsp poultry seasoning (can omit) 1 Tblsp corn oil 1/4 tsp garlic granules or powder Cut Tofu into nugget-sized pieces. Put all other ingredients into a saucepan. Bring to boil. Add Tofu. When broth comes to a boil again, turn down to medium simmer. Simmer for 30 minutes, stirring occasionally. Put Tofu and broth into a covered container, and let cool in fridge. Store Tofu Chicken in fridge, covered with the broth. Use in recipes calling for cooked chicken.
