Guest guest Posted May 4, 2001 Report Share Posted May 4, 2001 Veggie Corn Cakes Source: Unknown (Internet) 1 cup cornmeal 2 1/2 teaspoons baking powder 1 cup soymilk or other milk 1 teaspoons oil 6 oz firm tofu. diced 1/3 cup chopped red or green peppers 1/2 cup corn 1 green onion, sliced Combine all. Drop by 1/4 cupfuls onto very hot oiled pan. Cook about 2 minutes per side. If they stick, you didn't cook them long enough. Freeze. These freeze well. Great with sour cream and salsa.
