Guest guest Posted April 30, 2001 Report Share Posted April 30, 2001 Spinach Stuffed Potatoes Source: The Veggie Lovers Cookbook 6 russet baking potatoes 2 medium onions 3 Tbsp. oil 1 bunch spinach, stems removed 2 green onions, diced 1/2 tsp. paprika 1 tsp. parsley dash sea salt Bake potatoes until done. Cut in half, scoop out center and mash in a bowl. Saute onions in oil until transparent then add spinach and spices. Cover and simmer for 5 minutes or until spinach is soft. Add Saute to mashed potatoes and fill potato skins with mixture. Place filled potatoes on oiled baking sheet and sprinkle with paprika. Broil for 3 - 5 minutes until lightly brown on top.
