Guest guest Posted April 29, 2001 Report Share Posted April 29, 2001 Recipe taken from the Newstart Lifestyle Cookbook (1997) p. 129 MAZIDRA 3 cups water 1 c dried lentils 1 teaspoon salt 1 onion, chopped 1 clove garlic, minced 1 bay leaf 1/8 teaspoon thyme (optional) 3 1/2 cups cooked brown rice 1 3/4 cups shredded lettuce 1 3/4 cups diced tomatoes 7 tbsp. chopped green onions 7 tbsp. sliced black olives Bring first seven ingredients to a boil, then reduce heat and simmer for 45 to 60 minutes, or until thickened and lentils are tender. Remove Bay leaf. Place in a serving bowl and place remaining ingredients in individual serving bowls. Let each person make their own " haystack " . Serves 7.
