Guest guest Posted April 25, 2001 Report Share Posted April 25, 2001 Fettuccine with Marinated Tomatoes I watched this recipe being made on a cooking show quite a while ago. Unfortunately, I can't remember the woman's name whose recipe this is. And of course, I never wrote down any exact quantities. *chuckle* Everyone loves this though. 1 package fettuccine noodles (DeBoles makes rice fettuccini and Thai Kitchen makes some stir-fry rice noodles that are about fettuccini size) 1 medium sized loaf of your favorite bread, crust removed 2 pints various cherry tomatoes, grape, yellow, green or red 2 cloves garlic, minced 1/2 cup olive oil 1/4 cup red wine vinegar salt pepper Preheat oven to 350 degrees F. While noodles are cooking according to package directions, take a medium sized mixing bowl and whisk together the oil and vinegar. Add the minced garlic. Slice the cherry tomatoes in half and add them to the oil and vinegar mixture. By the time all the tomatoes are sliced and added, the oil and vinegar mixture should just cover the tomatoes. If they don't whisk some more oil and vinegar in a separate bowl (double the amount of oil as vinegar) and add. Add salt and pepper to the mixture, stir gently. Take your favorite bread and place it in a food processor to make breadcrumbs. They don't need to be super-small. Place the bread crumbs you make on a cookie sheet. Sprinkle the bread crumbs with olive oil, then salt and pepper. Bake in the oven until golden brown, approximately 10 minutes. The noodles should be done and in a serving bowl. Add marinated tomatoes and toss gently. Before serving put the toasted bread crumbs on top of the dish - do not mix in, they'll get soggy very quickly.
