California Waldorf Salad

 

3 medium apples2 oranges, sectioned1 stalk celery, minced1/2 cup raisins or currants

 

topping:

1 cup sliced mango or papaya1 cup toasted cashew pieces

 

dressing:

1 cup silken tofu, blended1/2 tsp. lemon rind2 - 3 tbsp. lemon juice1 ripe avocado, mashed1 - 2 tbsp. honey

 

Combine apples, oranges, celery, and raisins or currants. Puree' togetherall dressing ingredients in a blender. Combine apple mixture with dressingand mix well. Serve topped with slices of ripe mango or papaya and toastedcashews.
