Guest guest Posted April 24, 2001 Report Share Posted April 24, 2001 SPINACH AND CUCUMBER SPREAD This is a nice spread to serve with a gluten-free flat bread, rice cakes, or veggies. 1/2 cup cucumber, finely chopped and seeded10 ounces silken tofu10-ounce package frozen spinach, thawed and driedJuice of half a lemon1 bunch of scallion, finely minced1 teaspoon dried dillSalt to taste1/4 teaspoon dried basilPepper to taste Combine all of the ingredients (except the cucumber) in a blender and blend until the spinach and tofu are well incorporated. Remove mixture and transfer to a bowl. Mix in the cucumber and serve.
