Raspberry Tofu Pudding

 

Source: Vegetarian Cooking the Lazy Way (adapted)Serving Size : 4

1/4 cup raspberry preserves (fruit sweetened)2 teaspoons honey1 teaspoon vanilla1 -- 12.3 oz. package silken tofu

 

Use a blender or food processor and puree the raspberry preserves, honey, vanilla, and tofu.

Serve chilled or at room temperature with raspberries, blueberries, or cinnamon toast.
