I used some help from the cook book Tofu Cookery and my own sauce from when we used to eat chicken. I also used some of my own ideas about tofu and this is what I came up with. Tofu: cut into bit size squares. fry in dry, non-stick pan, low heat, no oil. with sea salt until dry. Set aside. In bowl, mix 1/2 cup cornstarch 1/4cup water 2Tbs. soy sauce. dip tofu in mix and deep fry in oil that has been heated to around 365, be careful as the tofu likes to stick together. spoon onto plate with paper towel to drain. Sauce: in pot mix : 1 cup pineapple juice 2TBS ketchup 2TBS brown sugar 2TBS brown rice vinigar 1 TBS soy sauce 1 TBS corn starch When everything is mixed well turn stove onto med heat and stir until thickened. pour over tofu, add pineapple, carrots or what ever you would like for veggies and serve.
