Guest guest Posted April 24, 2001 Report Share Posted April 24, 2001 Chocolate Chip Muffins 1 ¼ Cups brown rice flour ¼ Cup tapioca starch 1 Cup sugar 3/4 Cup cocoa 2 Teaspoons baking powder 1/4 Teaspoon salt 12 Oz apple sauce 3 ener-g eggs 1/4 Cup oil 1/4 Teaspoon vanilla 1/2 Cup chocolate chips ( or omit all together) In one bowl mix all dry ingredients. In a separate bowl mix all wet ingredients. Add dry ingredients to the wet ones and stir until moistened. Add Chocolate Chip and spoon into Muffin tins that have been coated with a non-stick spray. Bake at 350 Degrees for about 20 Minutes. Makes 12 Muffins Variations: Use 1/4 Cup chocolate chips & 1/4 Cup Peanut Butter chips. or 1/2 Cup Peanut Butter Chips for a Chocolate/ Peanut Butter Muffin Quote Link to comment Share on other sites More sharing options...
