This information is from a great vegan cookbook called " Incredibly

Delicious

- The Vegan Paradigm Cookbook. " There is a whole section on raw foods

(called " Rawsome " ).

" A tiny seed appears lifeless. Then quite magically, with the help of

fresh

water, air and sunshine, a sprout comes forth, bursting with life. It's

packed with enzymes, vitamins and nutrients that contain the elements

the

body needs for optimum growth and health. Sprouts are rich in

chlorophyll

and are a great source of protein.

" Growing sprouts is great fun and well worth the effort. It is a quick,

easy and inexpensive way to always get fresh vital nutrients into your

diet,

even if you are living in an area that does not have fresh foods in

season.

The process is rewarding as well as meditative, and will pay for itself

many

times over. The cost of the seeds in nominal and they grow into a

bounty

of

nutrition.

" Sprouts are full of vitamins and minerals in their purest form, which

are

easily digested with the help[ of the any enzymes they contain. They

are

actually germinated seeds, legumes and grains that, in the sprouting

process, become powerful enzyme-makers, converting carbohydrates into

simple

sugars, complex proteins into amino acids and fats into fatty acids.

These

conversions make the assimilation and absorption of their valuable

nutrients

easier. For example, the nutrient content of grains, seeds and legumes

can

increase 10%-20% when they are sprouted. Many sprouted grains and

legumes

also contain the essential amino acids. Sprouts are a wonderful way to

insure that you are getting the nutrition your body needs. "

" Sprouts and immature greens are the most nutritious and live, raw,

organic

foods that are available on this planet. " Victoras P. Kulvinskas, MS
