Guest guest Posted April 21, 2001 Report Share Posted April 21, 2001 Simple Veggie and Rice Soup 3 and 1/2 cups of water vegetable base or chicken-like broth 1/4 cup raw brown rice 1/4 of a 10 oz. box of frozen chopped spinach 1 medium carrot, shredded salt to taste 1/2 small onion sliced a little oil with which to saute the onion Heat the water in a 2-3 quart pot, add base according to the package directions to make a light veggie stock. Watch the salt, as these bases can be salty. Add the rice, cover the rice and let it cook until it is done about 20 minutes. In the meantime, heat the oil and then saute the onions until golden brown, or a little darker, just not burned. Remove them from the saute pan, drain any excess oil and add to the soup along with the carrot and the spinach. When the rice is done, season to taste and serve.
