Guest guest Posted April 6, 2001 Report Share Posted April 6, 2001 Vegan Pesto Source: www.enduring.com -3 large bunches fresh basil (3 packed cups) stems removed -1/2 cup pine nuts (or almonds) -2/3 cup fresh parsley -2/3 cup olive oil -6 tbsp nutritional (engevita) yeast -4 large garlic cloves -1/2 tsp salt just throw all the ingredients in a blender or food processor (dry items first), until it's smooth. this recipe is a " can't go wrong " type and is basically adjust to taste. you may want to track down a good market and/or bulk food store as the quality of fresh basil (as well as the price) can double depending on where you are. the same can be said of pine nuts. after mixing, prepare your favorite pasta and stir the pesto in (the rest you can save in your fridge for about a week). slice up some raw plum tomato, and throw in some steamed broccoli. feel free to experiment with adding the pesto to other foods. it can easily be rolled into pastry, added to vegetable sandwiches, and even stir fry.
