Guest guest Posted April 6, 2001 Report Share Posted April 6, 2001 Pasta With Tomato And Mushroom Source: www.veganforlife.org 2 cloves garlic 1 teaspoon extra virgin olive oil 2 onions Oregano Basil 3 tomatoes Half dozen fresh button mushrooms 1 dozen black olives, pitted 1 440g can peeled tomatoes 1 1/2 cups water Packet spaghetti (brand: pastariso) 1. Put oil in medium sized saucepan, and rub around base with absorbent paper towel. Peel and crush garlic and place in pan. 2. Peel and slice onions. Wash tomatoes and lightly brush mushrooms. Chop both roughly. Chop black olives roughly. Open can of peeled tomatoes. Place large pot of water on to boil. 3. Cook garlic in oil on medium heat until fragrant; about 1 minute. Add onions and cook lightly for a further 3 minutes or until soft. Add mushrooms, and cook until the mushrooms soften. Add oregano and basil to taste. 4. Add fresh tomatoes, olives and canned tomatoes, stir and blend together, continue to cook on low heat while pasta cooks. PASTA: Make according to directions on packet. 5.
